Cajun Chicken Pasta
Ingredients:
- 4 ounces linguine
- 2 boneless skinless chicken breasts, cut into thin strips
- 2 teaspoons cajun seasoning (or to taste)
- 2 tablespoons butter or 2 tablespoons margarine
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red bell pepper
- 4 ounces sliced mushrooms
- 1 thinly sliced green onion (1 to 2)
- 1 cup heavy cream (1 to 2 cups)
- 1/4 teaspoon salt
- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon black pepper
Directions:
- 1In a large pot with boiling salted water cook pasta until al dente; drain.
- 2While the pasta is cooking, place chicken and Cajun seasoning in a bowl and toss to coat.
- 3In a large skillet over medium heat saute chicken in butter until chicken is tender, about 5-7 minutes.
- 4Add green and red bell peppers, sliced mushrooms and onions, and cook for 2-3 minutes .
- 5Reduce heat; add heavy cream, basil, lemon pepper, salt, garlic powder and pepper and heat through.
- 6In a large bowl toss linguini with sauce.
- 7Sprinkle with grated Parmesan cheese if desired.

- 1 -2 cup heavy cream
- 1/4 teaspoon dried basil
- 1/4 teaspoon lemon pepper seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon pepper
- 4 ounces linguine or 4 ounces fettuccine pasta, cooked and drained
- grated parmesan cheese, to taste
Directions:
- 1Place chicken an Cajun seasoning in a bowl or resealable plastic bag; toss or shake to coat.
- 2In a large skillet over medium heat, saute.
- 3chicken in butter until almost tender, about 5 to 7 minutes.
- 4Reduce heat. Add cream and seasoning; heat through. Add pasta and toss; heat through. Sprinkle Parmesan cheese if desired. Adjust the Cajun seasoning if you like it spicieSolo Pesto Chicken and Pasta
Ingredients:
- 1 boneless skinless chicken breast (OR about 1/2 cup of cooked meat)
- 1 cup uncooked pasta (I like penne for this recipe)
- 1 tablespoon pesto sauce
- 1 tablespoon sour cream
- 1 tablespoon shredded parmesan cheese
Directions:
- Cook the pasta in 2 quarts of salted water for about 8 minutes, and drain.
- Cook the chicken breast whole until it reaches an internal temperature of 175°F degrees, and dice into bite size pieces.
- Mix the pesto sauce, sour cream, and parmesan cheese in the bottom of a serving bowl, add the hot pasta and toss to coat.
- Add the cooked chicken and toss again
