Perfect Pasta Salad

Ingredients

• 1 (1 lb) box tri-colored pasta
• 2 cups chopped green peppers
• 2 cups diced tomatoes
• 1 1/2 cups chopped red onions
• 1/2 lb cubed provolone cheese (optional)
• 1/2 lb sliced pepperoni
• 1/2 cup sliced black olives

DRESSING

• 3/4 cup pompeian extra virgin olive oil
• 3/4 cup pompeian red wine vinegar (this brand is excellent in this dish)
• 1/4 cup sugar
• 1 tablespoon oregano
• 1 teaspoon salt
• 1/2 teaspoon pepper

Directions

1. Mix together dressing first and set aside until sugar is dissolved completely.
2. Cook pasta according to box directions and rinse under cold water until cool.
3. Slice the sliced pepperoni circles in half and separate slices.
4. Mix together with pasta and chopped items, except the provolone cheese.
5. Pour dressing over it all and mix well.
6. Chill well.
7. Add provolone cheese to salad before serving, otherwise it gets soggy.
8. You may have to add extra red wine vinegar or olive oil to get it to the desired consistency.
9. Some people like it moist, others on the drier side.
10. This is guaranteed not to last long before it is completely devoured!

Still Another Tuna/Pasta Salad

Ingredients:

• 1 (6 1/2 ounce) can tuna, drained and flaked
• 1/2 lb cooked elbow macaroni or 1/2 lb small shell pasta, rinsed and drained
• 1 -2 hard-boiled egg, mashed
• 1/2 medium vidalia onion, minced
• 1/2 cup chopped or minced celery
• 1/4 cup chopped sweet red peppers or 1/4 cup green bell pepper
• 1 cup mayonnaise
• salt and pepper

Directions

1. In a large bowl, combine all ingredients.
2. Mix well to blend.
3. If salad is too dry, add more mayonnaise.
4. Taste, and adjust seasonings to your preference.
5. Chill well before serving.
6. Note: If you are going to triple the recipe, only use 1 hard boiled egg per can of tuna.

BLT Pasta Salad

Ingredients

• 1 cup mayonnaise or 1 cup salad dressing
• 1/4 cup lemon juice concentrate
• 2 teaspoons sugar
• 2 teaspoons chicken flavor instant bouillon
• 1 (7 ounce) package rotini pasta or 1 (7 ounce) package other pastas, cooked and drained
• 8 slices bacon, cooked and crumbled
• 1 large tomato, seeded and chopped
• 1/4 cup green onion, sliced
• 4 cups lettuce, thinly sliced

Directions

1. Combine mayonnaise, lemon juice, sugar and bouillon for the dressing.
2. Combine rotini, bacon, tomato, and green onion.
3. I recommend waiting until you are ready to serve before mixing in the lettuce.
   Ranch Picnic Pasta Salad
   
   

   Ingredients 

    
   

   • 1 (16 ounce) package angel hair pasta (break in half) or 1 (12 -16 ounce) package tri-color spiral pasta
   • 4 firm ripe seeded diced tomatoes
   • 1 (2 1/4 ounce) can sliced black olives, drained
   • 2 medium cucumbers, peeled pulp removed and diced
   • 1 small onion, finely diced
   • 1 small green bell pepper, seeded and diced
   • 1 small yellow bell pepper, seeded and diced
   • 3 (1 ounce) packages hidden valley ranch dressing mix
   • 1 (2/3 ounce) package Italian salad dressing mix (prepared as directed on package only using half the oil called for)
   • 1/2 cup olive oil
   • 1/3 cup red wine vinegar

   Directions

   
   

   1. Cook pasta according to package directions.
   2. Prepare Italian dressing mix according to directions (but using about 1/2 the oil called for).
   3. Mix Ranch dressing with vinegar and oil.
   4. Drain pasta well and rinse with cold water, drain well again.
   5. Place all ingredients into large bowl and toss well.
   6. Refrigerate 12 hours.
   7. Toss before serving.
   8. **Can use 1/2 of a green, yellow, and orange bell pepper to add more color.
   9. You can add other raw hard vegetables such as julienne carrots, blanched asparagus, sliced radish, anything you like.
