Healthy Pasta with Spinach Pesto Sauce
Recipe by  
"A healthy, low-fat alternative to high-fat pesto sauce. Can also be made with basil or cilantro."
Ingredients
Original recipe makes 4 -6 servings Change Servings

Directions

  1. Cook pasta according to package directions.
  2. While pasta is cooking, in food processor or blender, combine spinach, tofu, lemon juice, garlic, broth, cheese, pepper, and Italian seasoning, process until smooth. Set aside.
  3. Spray a large non-stick saute pan with cooking spray. Over medium heat, cook onions and mushrooms until tender. Reduce heat to low, add pesto mixture and heat until hot.
  4. Toss pasta with sauce and bacon bits. Serve with additional Parmesan cheese, if desired. NOTE: If sauce seems too thick, thin to desired consistency with pasta cooking water or broth.

Healthy Ziti with Tomato-Pesto Sauce

"For those who like pesto but also love tomato sauce, try this recipe. Quick to prepare and very good, too! Try serving with breadsticks."

Directions

  1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes. Drain.
  2. Meanwhile, in a saucepan over medium-low heat, mix together the pesto and basil tomato sauce. Bring to a simmer, and season with salt to taste. (You can also heat the sauce in a covered microwave-safe bowl: cook on high for one minute.)
  3. Place pasta in a large serving bowl. Toss with pesto-tomato sauce. Top with grated Parmesan cheese.

"This is a classic Italian pasta dish. Use fresh basil when it's in season; at other times, use fresh flat-leaf parsley."

Directions

  1. Cook diced bacon in a large saucepan over medium high heat until crisp, about 5 minutes. Drain all but 2 tablespoons of drippings from the pan.
  2. Add onions, and cook over medium heat about 3 minutes. Stir in garlic and red pepper flakes; cook 30 seconds. Add canned tomatoes, undrained; simmer 10 minutes, breaking up tomatoes.
  3. Meanwhile, cook the pasta in a large pot of 4 quarts boiling salted water until al dente. Drain.
  4. Stir basil into the sauce, and then toss with cooked pasta. Serve with grated Parmesan cheese.
